Biscuits
- 2 cups or 250 grams of all purpose flour
- 1½ tbsp baking powder
- 1 tsp granulated sugar
- ¾ tsp salt
- ½ cup unsalted butter
- 1 cup half and half or milk minus two tbsp
- 1 tbsp melted butter to brush on the top of the biscuits optional
Gravy
- 1 lb country sausage spicy or mild
- 3 tbsp flour
- 4 cups whole milk
- 1 tsp salt
- 1 tbsp pepper
- 1 tbsp Worcestershire
Biscuits
Preheat oven to 450 °F.
On a small cutting board, cut up the butter into tiny pieces. Once the butter is chopped up, place it in the freezer until needed.
In a large mixing bowl, combine the flour, baking powder, sugar and salt. Whisk until thoroughly combined.
Add diced butter and cut into the flour using a fork or pastry blender until the largest butter pieces are pea sized.
Add the half and half or milk until the dough comes together and is mostly moist. Do not overmix.
Turn the dough onto a floured surface. Pat the dough into a rectangle and then fold in half and pat into another rectangle. Continue to fold and pat the dough 8 more times. Dip the biscuit cutter into flour and then cut out 8 biscuits and place on the greased sheet pan one inch apart
Bake the biscuits for 12–15 minutes, or until golden brown and cooked through. Brush the tops with melted butter while they’re still hot. As the biscuits bake, continue preparing the gravy.
Gravy
Add the sausage to a skillet and cook on medium heat until browned. As you cook the sausage, break it up into small bitesize pieces. Do not drain the grease.
Once the sausage is brown, add the flour to the skillet and mix into the meat until it is absorbed.
Add 2 cups of whole milk and stir constantly until thickened. Once the gravy has thickened, add another cup of milk and continue to stir until it thickens up. Add in one more cup of milk and stir again until thickened.
Add 1 tbsp of Worcestershire sauce, salt and pepper.
Pour on top of the biscuits, then serve and enjoy!
